500 grams Apricot
1 l Buttermilk
4 sheets Lemon balm (for garnish)

Preparation steps

1.

Rinse, halve and remove the pits from the apricots and cook in a saucepan with a little water until tender.

2.

 Drain, the apricots and cool to room temperature.  Transfer to a blender with the buttermilk and puree, then strain through a sieve.

3.

Pour into glasses and serve garnished with lemon balm.
