300 grams Puff pastry dough (frozen)
3 ripe Apple (such as Boskop)
1 Tbsp lemon juice
Pastry flour (for te work surface)
butter (for the pan)
300 grams Sour cream
120 grams sugar
½ tsp Ground cinnamon
1 egg yolk
Lavender (for garnishing)

Preparation steps

Thaw puff pastry. Peel apples, quarter and core, cut into thin slices and drizzle with lemon juice. Roll out puff pastry on a floured work surface and line buttered springform pan with it, making an edge all around. Whisk sour cream with 100 grams (approximately 3 1/2 ounces) of sugar. Spread mixture on pastry and smooth.

Arrange apple slices on top in circular pattern and sprinkle with cinnamon and remaining sugar. Brush apple slices with beaten egg yolk and bake in preheated oven at 180°C (approximately 350°F) for about 30-35 minutes or until nicely browned. Remove from oven and cool. Carefully transfer to a cake plate and garnish with lavender flowers. Serve.
