½ cup unfiltered Apple juice
1 Tbsp Mustard seed
1 tsp cane sugar
2 Tbsps apple cider vinegar
½ tsp salt
peppers
2 Tbsps cold pressed Canola oil
1 pc daikon Radish
2 small Red onions
11 ozs Limburger cheese
1 bunch Chives
2 leaves Lettuce (to taste)

Preparation steps

1.

Bring apple juice, mustard seeds, sugar, vinegar and salt to a boil in a pot. Let it boil over high heat until reduced by about half.

2.

Season with pepper, stir in the oil with a whisk and let cool.

3.

Rinse radish, peel and cut into very fine slices. Peel the onions and cut into very thin rings (or slice both on a mandoline).

4.

Cut the cheese into slices and add to a bowl with radish and onions. Fold in the dressing and let everything sit for 10 minutes (marinate).

5.

Meanwhile, rinse chives, cut into rolls and shake dry. Sprinkle over the salad. Garnish to taste with lettuce and serve.
