19 ozs ripe Mangoes (flesh)
2 Tbsps water
2 Tbsps lemon juice
2 cups sugar
2 Passion fruit

Preparation steps

Put the mango, water and lemon juice into a large pan. Bring to a simmer and cook gently for about 10 minutes, until the fruit is soft.

Add the sugar and stir over a low heat until the sugar has dissolved. Bring to a boil and cook rapidly

until setting point is reached. To tell when setting point has been reached: remove the pan from the heat and put a little of the boiling mixture on a chilled saucer. As it cools, it will begin to set and will wrinkle when pushed gently with your finger and will remain in two separate parts when you draw your finger through it. 110ºC |220ºF on a sugar thermometer.

Scoop out the pulp from the passion fruit and stir into the mixture. Allow to stand for 5-10 minutes.

Pour into warm sterilised jars, cover and seal tightly.
