4 large, red Bell pepper
2 Red onions
400 grams Feta
2 Tbsps olive oil
2 Tbsps Vegetable broth (Instant)
1 Tbsp Red wine vinegar

Preparation steps

Preheat oven to 220°C (fan: 200°C, gas mark 4-5) (approximatey 425°F). Rinse bell peppers, cut into quarters and remove seeds and ribs. Line a baking sheet with parchment paper. Peel onions and cut into quarters. Separate individual layers. Mix with pepper quarters on baking sheet. Make sure peppers are skin side up.

Roast in oven for 15-20 minutes or until skin of peppers begins to bubble and forms black spots. Remove and cover with a damp kitchen towel. Remove skin from peppers and cut together with onions into pieces.

Crumble Feta and mix with peppers and onions in a bowl. Add vegetable broth, olive oil and red wine vinegar. Mix well and season with salt and pepper. Let soak for 1 hour before serving.
