- 1 kilogram waxy potatoes
- 2 eggs
- 1 Tbsp Pastry flour
- salt
- freshly ground peppers
- 2 Tbsps vegetable oil (to saute)
- 300 grams Crème fraiche
- 1 Tbsp lemon juice
- 1 garlic clove
- 3 Tbsps scallions
- 400 grams smoked Salmon (in slices)
Preparation steps

Peel, rinse and coarsely grate the potatoes into a bowl. Stir in the eggs and the flour and season with salt and pepper. Heat the oil in a large skillet and working in batches, drop the potato mixture by 1 tablespoon into the pan, flatten and saute until golden brown on both sides.

Crush the garlic through a garlic press. In a bowl, stir together the crème fraîche, lemon juice and garlic and season with salt and pepper. Stir in the chives. Serve the pancakes with salmon and chive cream.
