1 Red onion (cut into 8 pieces)
9 ozs Halloumi cheese (cut into 16 pieces)
8 cherry Tomatoes
1 yellow Bell pepper (seeds removed and cut into 4 pieces)
1 red Bell pepper (seeds removed and cut into 4 pieces)
cup olive oil
salt
peppers
1 clove garlic cloves (crushed)
1 Tbsp chopped parsley
1 tsp Caper (rinsed)

Preparation steps

1.
Thread the vegetables and cheese onto 8 wooden skewers.
2.
Place in a shallow dish, pour over 2 tablespoons of oil and season well with salt and pepper. Marinate for 1 hour.
3.
Mix the remaining oil with the garlic, parsley and capers and set aside.
4.
Heat the grill.
5.
Place the kebabs under the grill and cook for about 4 minutes on each side, until the vegetables are soft and slightly charred.
6.
Remove from the grill and drizzle a little of the parsley oil over each kebab before serving with cous cous.
