8 slices whole wheat cracker (about 80 grams)
14 ozs Dried Fruit (such as apricots, plums, figs, raisins)
4 ozs Cashews
1 Organic orange
2 Tbsps cocoa powder (about 15 grams)
2 Tbsps Shredded coconut (about 15 grams)

Preparation steps

1.

Put the crackers in a freezer bag and finely crumble with a rolling pin.

2.

Finely chop the dried fruit and cashews with a large knife and place in a bowl. Add cracker crumbs.

3.

Rinse  orange under hot water, wipe dry and finely grate the zest. Squeeze out orange juice. 

4.

Combine the orange zest and juice with 6 tablespoons of the dried fruit mixture and mix with the dough hook of a hand mixer until smooth; if the mixture is too dry, add some more orange juice.

5.

Place the cocoa powder and shredded coconut on 2 separate deep plates. Shape the fruit mixture into little Easter eggs with your hands. Roll half of the eggs in the cocoa powder and the other half in coconut, then place the candy in paper sweet cases.
