¼ cup sunflower oil
2 cloves garlic cloves (minced)
1 Tbsp Sesame seeds
½ tsp Chili flakes
2 large, skinless Chicken breasts (sliced)
2 Tbsps white wine vinegar
1 tsp Dijon mustard
1 tsp honey
0.333 cup olive oil
2 cups baby Spinach (washed)
1 Mango (pitted and sliced)
1 small Cucumber (sliced)
salt
freshly ground Black pepper

Preparation steps

Stir together the sunflower oil, garlic, sesame seeds, chilli flakes, and seasoning in a mixing bowl. Add the chicken and toss well to coat.

Heat a large frying pan over a moderate heat until hot. Pan-fry the chicken for 7 - 8 minutes, turning once, until golden.

Whisk together the white wine vinegar, mustard, honey, and a little seasoning in a small bowl. Whisk in the oil in a slow, steady stream until you have a thickened dressing.
4.
Dress the spinach, mango, and cucumber with the dressing, tossing well. Lift onto plates and top with the chicken before serving.
