½ cup fresh, grated Parmesan

Preparation steps

1.
Pour boiling water over the tomatoes and wait approximately 2 hours to rehydrate. Drain well and coarsely chop.
2.
Put the tomatoes, pine nuts, peeled garlic and parmesan in a food processor. Chop finely.
3.
Add the oil in a stream. Mix until a creamy pesto form.
4.
Season to taste with salt and cayenne pepper.
