½ cup olive oil
2 cloves garlic cloves (chopped)

Preparation

Preparation steps

1.
Heat the oven to 180ºC (160º fan) 350ºF, gas 4.
2.
Rub the potatoes with a little of the oil, place in a roasting tin and roast in the oven for 25 - 30 minutes or until tender, basting from time to time.
3.
Whisk together the remaining oil, garlic and lemon zest and juice. Season with salt and plenty of pepper.
4.
Coat the roasted potatoes with the dressing and serve warm.
