1 onion
1 garlic clove
5 Tbsps Vegetable broth
16 ozs Spinach (frozen)
1 Tbsp Shredded coconut
3 ½ ozs Yogurt
salt
peppers
1 generous pinch Curry powder
1 generous pinch ground Cumin

Preparation steps

1.

Peel onion and garlic. Dice onion and press garlic through a garlic press.

2.

Bring broth to a boil in a pot and add onion, garlic and frozen spinach. Return to a boil, cover and simmer over low heat until spinach is thawed, about 15 minutes.

3.

Meanwhile, toast shredded coconut in a dry pan until golden brown, tossing often. Allow to cool.

4.

Mix yogurt with salt and pepper (to taste) and the curry powder in a small bowl, stirring until smooth.

5.

Season spinach again with salt and pepper and mix in the cumin. Sprinkle with grated coconut and serve with curry yogurt.
