4 ozs dried Apricot
2 Tbsps butter
2 ozs honey
4 Tbsps Raw cane sugar
½ Organic orange
4 ozs Spelt flakes
2 ozs Shredded coconut
4 Tbsps chopped almonds

Preparation steps

1.

Chop apricots.

2.

Bring butter, honey and sugar to a boil in a small pot.

3.

Rinse orange in hot water, dry and cut in half. Finely grate 1 teaspoon zest, then squeeze juice.

4.

In a mixing bowl, combine 1 tablespoon orange juice, the zest, spelt flakes, grated coconut, almonds, diced apricots and butter mixture.

5.

Spread mixture on a parchment-lined baking sheet with a moistened rubber spatula until about 1/2 inch thick. Bake on the middle rack of a preheated oven at 300°F for about 25 minutes. Remove from oven and allow to cool completely before cutting into bars.
