16 ozs Rose hip (weight after seeds removed and chopped)
1 cup water
sugar (see recipe)

Preparation

Preparation steps

1.
Put the rose hips and water into a pan and bring to a boil. Reduce the heat, cover and simmer gently until the rose hips are very soft.
2.
Press the mixture through a sieve into a bowl and allow the pulp to cool.
3.
Weigh the pulp and put into a pan with 100g|1/2 cup sugar for every 100g pulp. Bring to a simmer and cook gently until the mixture thickens to a jam-like consistency.
4.
Bring to a boil and boil rapidly, stirring, until setting point is reached. Skim the surface with a slotted spoon.
5.
Spoon into hot sterilised jars, cover, seal and label.
