800 grams cooked, small potatoes (waxy)
6 scallions (purple)
2 Tbsps Canola oil
salt
freshly ground peppers
4 slices Bacon
1 sprig Laurel leaf
1 sprig rosemary

Preparation steps

1.

Preheat the oven to 200°C (approximately 400ºF).

Peel the potatoes and cut in half lengthwise. Rinse and trim the scallions and cut into 10 cm long pieces (approximately 4 inches).

Place both in an iron pan and drizzle with oil. Season with salt and pepper and bake in the oven for about 25 minutes until golden brown.

3.

During the last 10 minutes, add the bacon slices and herbs and mix into the vegetables.

Serve hot.
