Preparation steps

Preheat a convection oven to 180°C (approximately 350°F).

Slit the vanilla pod lengthwise and bring to a boil with the milk. Reduce the heat and, and infuse for about 10 minutes over low heat. Remove from the heat, and remove the vanilla pod. Beat the eggs with the sugar until fluffy. Gradually incorporate the milk mixture, stirring constantly. Pour the mixture through a fine sieve into 4 150 ml (approximately 5 ounce) ramekins. Place in a deep baking dish, and pour in enough hot water to submerge 1/3 of the ramekins. Bake for 30 minutes.

Peel and segment the citrus. Squeeze the juice from what remains of the fruit and mix with the honey and orange blossom water. Simmer until slightly syrupy. Remove from the heat, let cool slightly, and stir in the fruit. Cool completely.

Remove the flan from the oven and serve topped with the citrus mixture.
