11 ozs Yogurt (3.5% fat)
1 ¼ cups mineral water (chilled)
½ tsp salt
2 tsps Sea salt
¼ lemon
1 sprig mint
freshly ground Black pepper

Preparation steps

1.

Combine yogurt with mineral water and salt in a tall vessel. Puree until frothy with an immersion blender.

2.

Sprinkle sea salt on a plate. Cut lemon into quarters. Rub the edges of 2 serving glasses with the cut side of a lemon quarter and then press into the sea salt.

3.

Rinse mint, shake dry, pluck leaves and cut into thin strips.

4.

Finely crush the ice cubes in an ice crusher and divide between serving glasses. Pour in yogurt mixture, sprinkle with pepper, garnish with mint and serve immediately.
