1 red Bell pepper
2 small carrots (about 125 grams)
1 Red onion
1 pc ginger (about 25 grams)
1 pc Pineapple (or 175 grams of pineapple flesh)
1 Tbsp vegetable oil
salt
¾ cup Orange juice
1 Tbsp Red wine vinegar
¼ cup Ketchup
1 Tbsp honey

Preparation steps

1.

Rinse turkey pat dry and cut into 2 cm (approximately 3/4 inch) cubes.

Cut bell pepper into quarters, remove seeds, rinse and dice. Peel carrots and cut into fine strips.

3.

Peel the onion and cut into eighths. Peel ginger root and cut into fine strips.

4.

Remove pineapple rind and cut flesh into pieces.

5.

Heat the oil in a wok or a large frying pan. Pour in meat, season with salt and brown over high heat.

Remove the meat. Add onion, carrots and bell pepper to the wok and fry for 3-4 minutes while stirring. Add ginger and sauté briefly.

7.

Add orange juice, vinegar, ketchup and honey and cook for about 1 minute.

8.

Add meat and pineapple and cook over medium heat for 5 minutes. Season everything with salt and pepper. Serve with brown rice, if desired.
