1 Tbsp lemon juice
2 Tbsps Apple juice
120 milliliters Whipped cream
½ packet Vanilla sugar

Preparation steps

Rinse the raspberries. On each of 4 small wooden skewers, spear 3 raspberries. Rinse and quarter the strawberries. In a saucepan, simmer the honey, the remaining raspberries, lemon juice, and apple juice for 2 minutes. Remove from heat, let cool, and pour into 4 champagne glasses. Let cool completely.

Whip the cream with the vanilla sugar until stiff. Distribute the cream on top of the compote and serve garnished with one raspberry skewer.
