The refreshing carrot juice is a great alternative to alcoholic aperitifs, and is packed with nutrients including vitamin A.  

Vitamin A is one of the fat-soluble vitamins: the body can only absorb the vitamin properly if it has fat available at the same time. Therefore, you should never replace milk, which is low in fat anyway, with non-fat milk. On the contrary: if you don't have any calorie concerns, add a few drops of high-quality olive oil to the carrot juice!

1 sprig cilantro
½ tsp mild Curry powder
½ tsp hot Curry powder
¾ cup Carrot juice
2 Tbsps milk (1.5% fat)

Preparation steps

1.

Squeeze out juice from half a lime. 

2.

Rinse the cilantro, shake dry, pluck leaves and cut into fine strips.

3.

Mix together mild and hot curry powder in a small bowl.

4.

Combine the carrot juice and lime juice with 2/3 of the curry mixture in a tall vessel and puree briefly with an immersion blender.

5.

Combine the remaining curry mixture with the milk and blend with a milk frother to a stiff foam. Pour the carrot juice mixture into a tall serving glass, spoon the curry foam on top, sprinkle with cilantro and serve immediately.
