1 Orange
1 Red onion
50 grams black Olives
1 Tbsp White vinegar
2 Tbsps olive oil
salt
freshly ground peppers
parsley
Lemon balm (for garnish)

Preparation steps

1.

Trim snow peas, trim and blanch in a pot of boiling salted water for about 4 minutes. Drain, rinse with cold water and drain again.

2.

Peel orange with a knife, cut in half lengthwise and then cut crosswise into half slices.

3.

Peel onion and cut lengthwise into slices.

4.

Mix vinegar and olive oil in a bowl and season with salt and pepper.

5.

Mix sugar snap peas in a large bowl with onion slices, olives, orange slices and parsley. Drizzle with vinaigrette, mix, arrange on plates and serve garnished with lemon balm. Serve with pita bread if desired.
