14 ozs Smoked Fish (e. g. whitefish)
1 onion
4 cups waxy potatoes
cup smoked Bacon (sliced)
2 Tbsps parsley (chopped)
cup water
salt

Preparation steps

1.
Skin, bone and flake the fish.
2.
Peel and finely chop the onion.
3.
Peel and dice the potatoes.
4.
Fry the bacon until crisp in a nonstick frying pan, then drain on kitchen roll and break into pieces.
5.
Brown the diced onion and potatoes in the bacon fat. Then add the fish and bacon to the pan along with the water, cover and cook over a low heat for about 8-10 minutes. Then remove the lid and fry until the liquid has evaporated and the potatoes are golden brown (a further 6-8 minutes). Finally stir in the parsley and season to taste with pepper and salt (if necessary).
