6 thin Veal cutlets (about 120 grams)

100 grams Ricotta cheese
6 slices Prosciutto
2 Tbsps vegetable oil

Preparation steps

Wash the basil, shake dry and pluck the leaves. Pound the cutlets flat and season with salt and pepper, and then coat lightly with ricotta. Sprinkle the basil leaves on it. Place each cutlet over 1 slice of prosciutto. Roll up the slice from the narrow end firmly.

Trim the rolls on the sides so that all are equal. Place 3 rolls tightly on a flat plate. Rub the skewers with oil and pierce 4 skewers at equal distance evenly through the 3 rolls. Repeat with the remaining 3 rolls. Then cut through between the skewers with a sharp knife so that the 4 skewers separate.

Heat 1 tablespoon oil in a pan. Put skewers in portions, with addition of the remaining oil over medium heat and fry on each side for 3-5 minutes. Serve garnished with basil.
