3 small Pickled cucumbers (about 70 grams)
1 scallion
4 ozs Yogurt (low-fat)
2 Tbsps Mayonnaise
1 tsp Mustard
salt
peppers
1 bunch Chives
½ bunch flat-leaf parsley
7 ozs Bologna sausage (such as poultry sausage)
2 slices Whole Grain Rye Rolls (each about 45 grams)
Cucumber (or lettuce leaves)

Preparation

Preparation steps

1.

Cut pickles into thin strips. Rinse the scallion into thin rings.

2.

Mix together yogurt, mayonnaise and mustard and season with salt and pepper. Stir in scallion and pickles.

3.

Rinse chives and parsley and shake dry. Cut chives into thin rings. Pluck parsley leaves and chop finely. Stir herbs into the dressing.

4.

Remove sausage casing and cut into thin strips. Mix into dressing. Season with salt and pepper. Let sit for 10 minutes.

5.

Serve salad on bread slices with cucumber (or salad leaves).
