300 grams fresh Salmon
1 shallot
1 Tbsp Caper (from a jar)
2 Tbsps grapeseed oil
salt
freshly ground peppers
lemon juice
1 handful Onion sprouts
4 Tbsps Salmon caviar

Preparation steps

1.

Trim the spinach, rinse and spin dry.

2.

Rinse the salmon, pat dry and cut into very small cubes. Peel the shallot and chop finely. Mix with the capers, salmon and grapeseed oil and season with salt, pepper and lemon juice.

3.

Arrange the spinach with sprouts on plate. Top with the tartare and serve garnished with salmon caviar. As desired serve with a light lemon vinaigrette.
