1 garlic clove
4 Tbsps olive oil
4 Salmon (each about 150 g)
½ lemon (juiced)
1 tsp peppercorns
salt
2 Tbsps Pine nuts
freshly ground peppers
Nutmeg (freshly grated)

Preparation steps

Rinse the spinach, and remove the tough stems. Peel and finely chop the garlic. Heat 1-2 tablespoons of oil in a saucepan, and sauté the garlic. Add the spinach, cover, and cook until wilted. If necessary, add a little water.

Rinse the salmon, pat dry, and drizzle with the lemon juice. Season the salmon with salt and pepper. Heat the remaining oil in a pan, and sear the salmon for 1-2 minutes on each side. Reduce the heat to low, and cook for 2-3 minutes longer until done.

Mix the pine nuts into the spinach mixture, then season with salt, pepper, and nutmeg. Place the spinach mixture on plates, top with the salmon, and crumble the feta cheese over the top.
