Preparation steps

1.

Remove the outer leaves from the brussels sprouts, and score the stalk crosswise. Blanch in boiling salted water for 8-10 minutes until al dente.

Cut the bacon into thin strips, and sauté in the clarified butter for 2-3 minutes until crispy. Drain the sprouts, add to the pan, and cook for 2-3 minutes. Mix the nuts into the pan and season to taste with salt, pepper, and nutmeg.
