1 small Lime
2 Tbsps non-fat Greek yogurt
liquid Sweetener
½ cup unsweetened Rhubarb juice
Ice cubes

Preparation steps

1.

Rinse and hull the strawberries and pat dry. Reserve 1 large berry for garnish.

2.

Quarter remaining berries and place in a tall vessel.

3.

Rinse lime in hot water, wipe dry, finely grate the zest and put on a plate. Halve lime.

4.

Lightly rub the rim of a serving glass with a lime half, then dip in the grated peel. 

5.

Squeeze out juice from half a lime, measure out 2 tablespoons and add to the strawberries. (Reserve the other lime half for another use.)

6.

Add yogurt and rhubarb juice to the strawberries and puree with an immersion blender. Add sweetener to taste. Fill the glass with ice cubes, then pour in the smoothie. Cut a slit in the reserved berry and place it on the rim of the glass for garnish. Serve immediately.
