Pastry flour (for dusting)
40 grams Chives
300 grams Cherry tomatoes
400 grams Quark
4 Tbsps olive oil
salt

2 handfuls Arugula
60 grams fresh Parmesan

Preparation steps

Preheat the oven to 180°C (350°F) convection.

Roll out the pastry on a floured surface the size of the sheet. Line a baking sheet with parchment paper and put the puff pastry on paper. Rinse the chives, shake dry and cut into rolls. Rinse and halve the tomatoes. Mix the quark with olive oil and chives until smooth, season with salt and pepper. Spread quark mixture on the pastry and top with the tomatoes. Bake in preheated oven for about 30 minutes.

In the meantime, rinse the arugula and spin dry. Arrange the arugula on the pastry when done and use a microplane to shave Parmesan over top.
