Preparation steps

For the potatoes: Peel, rinse and coarsely grate potatoes. Season with salt and pepper. Form potatoes into small, thin cakes. Heat butter in a pan and cook cakes until golden brown on each side. Place in a preheated 70°C (approximately 150°F) oven to keep warm.

For the herbed cheese: Whisk together creme fraiche and quark. Season with herbs, salt and pepper. Mix well.

Spread herbed cheese on half of the warm cakes. Top cheese with another cake and secure with a toothpick. Serve immediately.
