50 grams Sushi rice
Iodized salt
1 tsp Raw cane sugar
2 Tbsps Rice vinegar
50 grams Extra fresh Perch fillet
2 sticks Celery
3 Radish
1 tsp freshly grated Horseradish
1 Nori seaweed
pickled ginger
soy sauce
Wasabi

Preparation steps

1.

Cook the rice with a little salt according to package directions. Heat the sugar and vinegar in a skillet until the sugar has dissolved, add to the rice and mix with a fork. Let cool.

Cut the fish into thin strips and then into pieces. Thinly slice the celery and radishes. With slightly dampened hands, form the rice into small oblong balls.

3.

Top the rice with a little horseradish, the fish, and some of the celery and radishes. Wrap as desired with strips of nori. Serve with the remaining vegetables, pickled ginger, wasabi and soy sauce.
