3 Tbsps jam sugar (Pectin, 3:1)
4 very ripe Peaches
liquid Sweetener
1 very fresh egg
4 ozs Blueberries
4 stalks mint

Preparation steps

1.

Halve vanilla bean lengthwise and scrape out seeds.

2.

Place half of the cinnamon stick with the sugar and 7 tablespoons of water in a small pot. Bring to a boil and let cook until syrupy. Pass through a sieve into a bowl.

3.

Rinse peaches, wipe dry, halve, remove pits and chop. Place in a tall vessel with the syrup and puree with an immersion blender.

4.

Pass the peach puree through a sieve into another bowl. Add sweetener to taste. 

5.

Separate the egg and place the white in a tall vessel (save the yolk for another use). Whisk until fluffy, then fold into the peach puree.

6.

Freeze mixture in an ice cream machine (or in a shallow container, beating often with a hand mixer). Freeze for at least 6 hours.

7.

Rinse blueberries and drain. Rinse mint, shake dry and pluck leaves. Serve peach sorbet with berries and mint leaves.
