Preparation steps
1.
Rinse chicken breasts, pat dry and cut into strips.
2.
Cook pasta in boiling salted water according to package instructions until al dente.
3.
Rinse tomatoes and pepper, cut into quarters, remove seeds and cut into strips.
4.
Rinse arugula, cut out tough stems.
5.
Halve olives.
6.
Heat oil in a pan and saute chicken strips for a few minutes. Add tomatoes, olives and pepper and saute briefly. Deglaze pan with white wine. Simmer, stirring, for about 5 minutes. Add pasta to the pan and mix well. Add dripping wet arugula and season with salt and pepper. Arrange in warmed plates and serve.
