1 pkg Pasta (500 grams)
2 Chicken breasts (cut into bite-sized pieces)
1 onion
1 tsp grated fresh ginger
2 Tbsps olive oil
2 bunches parsley (finely chopped)
500 milliliters Vegetable broth
2 Tbsps Mascarpone
2 Tbsps lemon juice
½ whole lemon (thinly sliced)
salt
freshly ground peppers

Preparation steps

1.

Peel the onion and finely chop. Heat the oil in a saucepan, sweat the onion until soft, add the ginger and chicken and saute for a few minutes, then season with salt and pepper.

Stir in parsley, vegetable, mascarpone, lemon juice and zest to the chicken mixture. Cook pasta according to package directions, mix with the sauce and serve with garnished parsley leaves and lemon slices.
