1 pc fresh ginger
1 ½ lbs Strawberries
½ cup elderflower syrup
1 sprig Lemon balm
1 ½ qts sparkling mineral water

Preparation steps

1.

Peel and thinly slice ginger root. Place in a pot with 500 ml (approximately 2 cups) water and bring to a boil. Reduce heat, cover and simmer for 10 minutes.

Lift ginger slices out with a slotted spoon and allow liquid to cool. Pour into ice cube trays and freeze until solid, about 2 hours.

3.

Meanwhile, rinse strawberries in a bowl of cool water. Lift out and drain in a sieve. Quarter berries and add to a punch bowl.

4.

Add syrup and 350 ml (approximately 1 1/2 cups) mineral water. Mix gently to combine.

5.

Rinse lemon balm, shake dry and add to punch bowl. Cover and chill at least 30 minutes.

6.

Add remaining mineral water along with strawberries and stir. Add ginger-flavored ice cubes and serve immediately.
