1 chicken (1.5 kg, oven-ready)

2 organic lemons
2 Tbsps olive oil
5 sprigs fresh thyme
4 Tbsps Lemon infused olive oil
400 grams waxy potatoes

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Rinse the chicken, pat dry and season inside and out with salt and pepper. Rinse the lemons, cut into wedges and fill the cavity of the chicken. Place the chicken in a roasting pan with greased with olive oil. Rinse the thyme, shake dry, pluck the leaves, chop finely and sprinkle over the chicken.

Bake for 40 to 45 minutes. Occasionally sprinkle with lemon oil.
