Preparation steps

In a very large pot, bring 15 liters or 16 quarts of water to a boil Add lobsters headfirst into the pot. Cook for 5 minutes, using a spoon to hold the lobsters under the water and boil for an additional 10 minutes.

Heat the butter, skimming the foam and pour into bowl. Cut the lemon into slices. Remove the lobster from the water and serve with the clarified butter and lemon wedges.
