2 Tbsps Oil
1 ¾ cups Cottage cheese
1 Pineapple (chunks)

Preparation steps

1.
Heat the oven to 220C (200C fan) 425F, gas 7.
2.
Wash the potatoes and dry with a clean tea towel.
3.
Rub the potatoes with the oil and a little salt.
4.
Bake the potatoes on the shelf in the oven for 1 - 1 1/2 hours or until cooked through.
5.
Mix the pineapple chunks with the cottage cheese, season with salt and pepper.
6.
Split open the potatoes with a cross and serving with the cottage cheese.
