A tip for on the road: freeze some of the ginger beer as cubes and use them to cool the drink during transport.

1 pc ginger (about 125 grams)
4 ozs cane sugar
2 Limes (1 of organic quality)
2 Oranges (1 of organic quality)
liquid Sweetener (to taste)
cold, sparkling mineral water (to taste)
4 sprigs mint
in addition: Ice cubes

Preparation steps

1.

Peel ginger and grate finely.

2.

Bring 1.25 liters (approximately 5 cups) water and sugar to a boil, add the grated ginger and cook 1 minute. Rinse organic lime and orange, wipe dry and zest outer colored peel of each.

Pour citrus peel into a decanter and add the hot liquid. Allow to cool at room temperature.

Halve and juice the remaining lemon and lime. Pour lemon juice into the carafe. Cover beer mixture with a kitchen towel and place in a cool, dark location or in the refrigerator for 24 hours.

5.

Pour ginger beer through a fine-mesh sieve. Add sugar and stir.  Add ice cubes and mineral water to taste. Rinse mint, pat dry and remove leaves from stems. Serve garnished with mint leaves, lime and orange slices.
