- For the tomatoes
- 500 grams green Tomatoes
- salt
- freshly ground pepper
- 4 tsps olive oil
- To garnish
- 1 Beefsteak tomato (About 150 g)
- 4 small firm Tomatoes
- 3 scallions
- 1 garlic clove
- 2 Tbsps olive oil
- salt
- cayenne pepper
- 1 pinch sugar
- 1 pinch Cumin
Preparation steps

For the tomatoes: Rinse the tomatoes and cut into thick slices. Season with salt and pepper. Heat the olive oil in a nonstick pan. Saute the tomatoes slices on both sides over high heat. Let cool.

For the garnish: Crosswise cut the skin of the tomatoes. Blanch in boiling water for 1 minutes. Rinse in cold water and peel. Cut or crush the tomatoes very small. Rinse the tomatoes and dice finely. Rinse the spring onion and cut into thin rings. Peel the garlic.
3.
Mix the tomatoes with the spring onions. Press the garlic. Stir in the olive oil and season with salt, cayenne pepper, sugar, and cumin. Serve the tomato mixture on the fried tomatoes while warm.
