5 ozs Smoked salmon
1 small Cucumber (about 250 grams)
2 sprigs mint
8 slices Whole Wheat Toast

Preparation steps

1.

Cut a lemon in half and squeeze juice. Combine cream cheese with 2 tablespoons lemon juice, salt, pepper and a few splashes of Worcestershire sauce. Mix until smooth.

Cut the salmon into very small pieces, fold into the cheese and refrigerate the mixture.

3.

Rinse the cucumber, peel and cut lengthwise into thin slices.

4.

Add cucumber slices to a bowl and sprinkle with salt. Let stand for 10 minutes, then drain the accumulated water.

5.

Rinse the mint and shake dry. Pluck and chop leaves and add to the cucumber slices.

6.

Spread the cream cheese mixture on the slices of bread, placing slices next to each other on the work surface.

7.

Add the slices of cucumber to 4 slices of bread. 

8.

Use the remaining 4 slices of bread to top the slices of bread with the cucumber, placing them cream cheese-side down and pressing well to form sandwiches. Wrap in plastic wrap until ready to serve (up to 30 minutes).

9.

Unwrap the sandwiches just before serving. Remove the crusts and cut the bread into bite-sized pieces. Secure with toothpicks and serve on a plate.
