The little morsels provide a whole day's supply of vitamin D. The fat-soluble vitamin promotes the storage of calcium and phosphate in the bones, thus ensuring their stability and resilience. Plenty of egg, cheese and fish protein as well as a dose of polyunsaturated fatty acids from salmon increase the benefits.

For dinner, serve these with a little salad and bread. The indicated quantity is then sufficient for 4 persons.

Preparation

Preparation steps

1.

Cook eggs in boiling water until hard boiled, 9 minutes. Drain the water, rinse with cold water and peel eggs. Allow eggs to cool slightly and then chop finely.

2.

Squeeze half a lemon. Stir cream cheese in a bowl with salt and pepper to taste, 1 tablespoon lemon juice and Worcestershire sauce until smooth.

3.

Trim scallions, rinse and cut into small cubes. Cut bell pepper into quarters, trim, remove the seeds, rinse and finely chop.

4.

Rinse dill, shake dry, pluck off the fronds and chop finely. Mix eggs, scallions, diced bell pepper and dill into the cheese mixture.

5.

Rinse cucumber, trim and cut lengthwise into thin slices on a vegetable slicer or a mandoline.

6.

Place a piece of plastic wrap of about 12 x 16 inches on the work surface and then place the smoked salmon overlapping so that the plastic wrap is almost completely covered.

7.

Place cucumber slices overlapping perpendicular to the short side of the sheet on top of the salmon. Pat cucumber slices dry with some paper towels.

8.

Place the cream cheese mixture in a piping bag with a wide tip and pipe over the cucumber slices along the short edge.

9.

Turn to roll using the plastic wrap. Form into a tight roll and chill for 1 hour.

10.

In the plastic wrap, cut into 3/4 inch slices just before serving. Remove the slices from the plastic wrap and place on a plate.

Garnish to taste with cucumber slices and dill leaves.
