125 grams Mascarpone
1 tsp Mustard
1 tsp Horseradish (from a jar)
1 tsp grated Lemon peel
350 grams smoked Salmon (sliced)
½ bunch Chives
2 organic lemons
1 bunch Cress

Preparation steps

1.

Rinse scallion, cut off end and cut into thin rings. Stir with mascarpone, mustard, horseradish, lemon zest and salt and pepper to taste. Arrange salmon slices (about 2 per roll) slightly overlapping between sheets of plastic wrap.

Flatten each set of salmon slices with a rolling pin. Remove plastic wrap and top each with 1 teaspoon cream. Using the plastic wrap, roll salmon slices over the cream into tube. Blanch chives in boiling water briefly, rinse in cold water and pat dry.

3.

Wrap each salmon roll with 2 chives. Cut lemons into thin slices, spread on plates and top with the packets. Garnish with cress and serve.
