8 cups water
1 small onion (minced)
2 tsps salt
tsp annatto
tsp paprika
freshly ground Black pepper (to taste)
1 cup frozen peas (thawed)
1 Pimento sliced for garnish (110 g|4 oz)

Preparation steps

1.
Place rice in a large pot with a tightly fitting lid and add water. Stir in the onion, salt, annatto, paprika and pepper. Bring to a boil over medium-high heat. Reduce heat to low, put the lid on and simmer.
2.
Cook until the rice is tender and the water has evaporated, about 20 minutes, stirring once halfway through. Garnish with pimento slices and serve.
