1 cup Rice flour
Turmeric
1 egg
1 Tbsp fresh parsley (chopped)
crushed Red pepper flakes (ground)
4 Tbsps olive oil
2 Tbsps lemon juice
16 Prawn (ready-to-cook, peeled, entrails removed)
vegetable oil
2 handfuls Mache Lettuce (lamb's lettuce)
Lemon wedge

Preparation steps

1.
Mix together the flour, a pinch of turmeric, the egg and 175 ml water to create a smooth, thick batter. Stir in the parsley, a pinch of chilli flakes and a little salt. Cover and leave to rest for around 15 minutes.
2.
Mix together the olive oil and the lemon juice and season with salt.
3.
Drag the prawns through the batter and fry in hot oil for around 2 minutes each. Pat dry with kitchen paper.
4.
Mix the dressing with the lettuce and serve with the prawns on plates. Garnish with lemon wedges and serve with mayonnaise.
