3 Tbsps white wine vinegar
4 Tbsps sunflower oil
1 tsp Mustard
1 Endive (torn into bite-sized pieces)
1 onion (diced)
1 cup smoked Bacon (streaky, American)

Preparation steps

1.
Cook the potatoes in boiling, salted water for around 25-30 min until fork-tender.
2.
Mix together the vinegar, oil, mustard, salt and pepper and stir in the endive and the onion.
3.
Fry the bacon for 4-5 min until crispy.
4.
Drain and peel the potatoes and mash roughly. Stir in the salad and the bacon, season with ground black pepper and serve.
