Preparation steps

1.

Combine sugar with 150 ml (approximately 3/5 cup) of water and cherry brandy in a small saucepan and heat up, stirring, until sugar melts. Simmer until golden, turning pan occasionally (do not stir).  

2.

Rinse and dry cherries. Dip into caramel and drain on wax paper. Use for garnishing cakes or other desserts.
