1 Cantaloupe (about 28 oz)
1 Tbsp slivered almonds
1 bunch cilantro
1 small Lime
4 Tbsps honey
11 ozs Cottage cheese

Preparation steps

1.

Cut melon in half with a large knife and remove seeds with a teaspoon.

2.

Scoop flesh into small balls with a melon baller. Place in a bowl and refrigerate.

3.

Toast almonds until light brown in a dry skillet, then leave to cool.

4.

Meanwhile, rinse cilantro, shake dry, pluck leaves and combine with the almonds in a tall vessel. Puree with an immersion blender.

5.

Cut lime in half, squeeze juice and stir 2 tablespoons juice with cilantro puree and honey.

6.

Arrange melon balls on the cottage cheese. Serve with the cilantro dip.
