½ cup chopped Walnut
½ cup grated Parmesan
2 cloves garlic cloves (finely chopped)
Sea salt
freshly ground peppers
cup extra virgin olive oil

Preparation steps

1.
Put the rocket, walnuts, parmesan, garlic and a little salt and pepper in a food processor. Blend until smooth, scraping down the side occasionally.
2.
With the motor running gradually pour in most of the olive oil until well blended.
3.
Spoon into cold sterilised jars. Pour a little of the remaining oil over the top and seal tightly. Store in the refrigerator for up to 1 month
