- ¾ cup shelled Walnut
- 2 Tbsps white wine vinegar
- 4 Tbsps olive oil
- 1 tsp honey
- 12 Radish (finely sliced)
- 5 cups mixed Lettuce (e. g. arugula, sorrel, torn into bite-sized pieces)
- 8 ozs Goat cheese (sliced)
Preparation steps
1.
Dry roast the nuts in a pan over medium-low heat, let cool and roughly chop.
2.
Mix together the vinegar, oil and honey and season with salt and ground black pepper.
3.
Mix together the lettuce and radishes and arrange on a plate. Place the cheese on top and drizzle with the vinaigrette. Add the nuts and serve with apricot chutney as desired.
